Can someone please tell me what the opening game of the Sicilian
Defence is meant to achieve.

I once saw the Open Sicilian explained in a very simple fashion: Black,
with an extra pawn in the centre, is likely to be a little better in an
endgame, but White has plenty of tactical resources to counter that.

As for the immediate goals, they depend on the variation, but queenside
expansion is common to most or all of them.

Asymmetry first. The double King Pawn openings are essentially
eliminated. Black aims at dynamic rather than static equality.

Second, Black (usually) gets control of the c-file in return for White
getting a freer hand in the center. Black's c-file span is longer
(generally) than White's d-file span.

Third, Black can get a minority attack on the Queenside in some cases.

Fourth, Black generally gets more Pawns in the center than White.

Other stuff depends on many things. Black has several plans such as the
Dragon (fianchettoed Bishop), central strike (d-Pawn in the Four
Knights or Taimanov, e-Pawn in the Najdorf, Boleslavsky or Pelikan),
tactical chances based on R(c8)xN(c3) followed by N(f6)xe4.
